Silver Grill Café, Odell Brewery collaborate on limited-edition CinnsationAle

Cinnamon rolls and American ale yeast are not the only things that go into Silver Grill Café and Odell Brewery’s CinnsationAle collaboration.

The brewing of the beer was inspired by the coming together of two of Fort Collins’s most popular destinations, and has grown into a favorite seasonal tradition for the community.

“It’s a big deal,” said Heather Beckman, managing partner at Silver Grill Café. “Odell is an awesome brewery and we love working with them. It’s a wonderful partnership, and also one of the best promotions we have ever done.”

Expect a line out the door at the fourth annual tapping of CinnsationAle, held at Odell Brewery from 4-6 p.m. Thursday.

Silver Grill Café, the oldest restaurant in Northern Colorado, will be providing the event with 100 of their freshly-baked cinnamon rolls to pair with the festive seasonal ale.

“Working with Silver Grill Café has been great,” said Brent Cordle, pilot system and cellar series manager at Odell. “It’s exciting for both of us. They are easy to work with, and we love having a special beer on tap using their cinnamon rolls.”

The brown ale, infused with Silver Grill Café’s cinnamon rolls and cinnamon syrup, has become a Fort Collins favorite seasonal delight.

“It’s a big event for local Fort Collins to see the collaboration and try the beer,” Cordle said.

The idea behind CinnsationAle began with a Silver Grill Café team discussion on how to integrate the cinnamon rolls into other aspects of the restaurant. Silver Grill Café’s owner John Arnolfo brought up the idea.

“John said, ‘Hey, maybe it’s a long shot, but maybe they will brew a beer with us,'” Beckman said.

Odell brews seven barrels of CinnsationAle that go fast, usually gone by the weekend at Odell and lasting through Christmas at Silver Grill Café.

“I give Odell a lot of credit,” Beckman said. “Over the years now, when they give brewery tours, they tell the tour about us. We get people coming in saying Odell’s sent them our way to have a cinnamon roll and a beer. It’s a fun partnership.”
